Among the many kinds of Green Tea, "sencha" is the most popular and long acknowledged tea in Japan. Its distinctive flavor comes from the natural growing process; After surviving the long, cold winter, the tea leaves are bathed in sunlight along with the breath of spring while growing on the nourishing ground.

"Sencha" is an unfermented tea made by steaming the leaves before their components are oxidized in order to stop the enzyme reaction that causes fermentation. Unfermented, sencha tea is believed to have more beneficial health effects than black tea or oolong tea because the vitamins and active ingredients, such as Catechins, have not been removed through a fermentation process.
